This week, I have one recipe to share, and it is a winner. We all liked this dish so much that I wish I had doubled or even tripled the recipe so we had more leftovers.

Spinach-Artichoke Rigatoni
I promise that not every DIY meal kit recipe is going to be a casserole, but it is the dead of winter around here and currently -3° F. Baking casseroles just feels right this time of year. A side benefit is that the heat of the oven keeps the kitchen toasty too.
Recipe: Spinach-Artichoke Rigatoni
Recipe Notes:
- Serves 4-6
- This dish could easily double or triple.
- Reducing the amount of cheese will not alter the flavor, and it is a healthier choice.
- If you are not averse to adding more carbs, a mix of 1/3 c. bread crumbs, a TBSP of olive oil, and 1/4 c. Parmesan would make a delicious crispy topping since this dish is finished under the broiler. (Double or triple as necessary.)
- Total preparation time: Exactly 30 minutes

Storage containers:
We use these Sistema KLIP IT boxes (shown today) or the larger size depending on our needs. We are also big fans of 1.3 cup Snapware* for small portions. They fit nicely in the Sistema Klip-it storage boxes. I also recently added these tiny lidded glass containers (intended for baby food, but they work perfectly for spices or small portions).
*This links to the plastic version, but we prefer glass. Unfortunately, the glass containers, sold in sets of four, seem difficult to find now. This ten-piece set includes the small Snapware containers we use as well as some additional, useful sizes.

It’s times like this I wish my husband were NORMAL and ate cheese! This looks absolutely delicious! One point you could add to the bullets at the end: non-vegetarians could add cooked chicken or sausage to this to add protein. Loved your bullet about decreasing cheese if desired. I don’t even have to make this to know it’s a winner!
