DIY Meal Kits | Week 5

Good morning. I’m in a car on my way back from Indiana. My father-in-law had an art show opening over the weekend. For reference, he is the artist who created the charcoal drawing in The Scary Bathroom. He is a talented man, and it was fun to take a road trip to support him and see all of his work in one place.

I have one recipe for you today, and it is super easy. We are eating it when we get home tonight. After a long trip, it is nice to walk through the door and not have to think about what to prepare for dinner. This is the perfect dish for that.

Greek Brown and Wild Rice Bowl

Recipe: Greek Brown and Wild Rice Bowl

Recipe notes:

  • Instead of ready-to-serve rice, I used brown rice that I prepared in advance in the Instant Pot. Brown rice takes about 45 minutes to boil, so I recommend cooking it a day in advance if you can.
  • I recommend storing the avocado separately since it should not be stored in the fridge. 
  • This recipe could be modified as a Mexican dish with cheddar and salsa, or maybe Indian with curry, chutney, and yogurt instead. Get creative!
  • For added protein add a boiled or fried egg.

Storage containers:
We use these Sistema KLIP IT boxes (shown today) or the larger size depending on our needs. We are also big fans of 1.3 cup Snapware* for small portions. They fit nicely in the Sistema Klip-it storage boxes. I also recently added these tiny lidded glass containers (intended for baby food, but they work perfectly for spices or small portions).

*This links to the plastic version, but we prefer glass. Unfortunately, the glass containers, sold in sets of four, seem difficult to find now. This 10-piece set includes the small Snapware containers we use as well as some additional, useful sizes.
