Today’s recipe is a household favorite, and since the weather is still cold and snowy, a hot, spicy dish right out of the oven, sounds perfect.

Enchiladas Your Way
Recipe: Ten-Minute Enchilada Sauce
Recipe Notes:
- Today’s post focuses on the Enchilada sauce. What you do with it may vary greatly.
- I usually double the batch and freeze half. (Thaw it in the fridge, two days in advance.)
- The recipe calls for self-rising flour, but I use heaping tablespoons of regular flour instead.
- While the sauce is cooking, roll the enchiladas and place them in a greased baking dish.
- When the sauce is ready, pour it over the rolled enchiladas and sprinkle some grated cheese on top.
- This dish works just as well prepared a day or two in advance.
Fill your enchiladas with:
- Plain grated cheese or a mix of cheddar + pepper jack
- Refried beans + grated cheese
- Shredded pre-cooked meat such as rotisserie chicken
- Vegetarian or Vegan meat-substitutes
- Cottage cheese, shredded cheese, + spinach
- Sauteed vegetables + shredded cheese
Bake:
Bake at 375 degrees for 20-25 minutes until the sauce is bubbly, and the cheese has melted.
Serve:
Serve with sour cream, guacamole, or salsa if you like. Add a side salad to round out the meal.

We use these Sistema KLIP IT boxes (shown today) or the larger size depending on our needs. We are also big fans of 1.3 cup Snapware* for small portions. They fit nicely in the Sistema Klip-it storage boxes. I also recently added these tiny lidded glass containers (intended for baby food, but they work perfectly for spices or small portions).
