Today’s recipe is a basic Frittata. A Frittata is sometimes described as a crustless quiche or even a baked omelet. The recipe I am linking is easily adaptable and simple to double. It also provides delicious leftovers.
Before I get started, I have a couple of housekeeping notes. I have decided that instead of posting these DIY meal kit recipes on Mondays, I’m going to combine them with the Friday Posts that I like to write. That should make weekend grocery shopping trips easier to plan. In the past, Friday posts have been sporadic, but there will be one every week now unless I announce otherwise. Expect recipes and more old house-related talk and links too. I’m posting this recipe today, and I will post a second recipe on Friday to fit in with the new routine.

Basic Frittata
Recipe: Chickpea and Rosemary Baked Frittata
Recipe Notes:
- I added an extra egg since because the recipe called for four large eggs and I only had medium eggs.Â
- This recipe suggests a springform pan, but an 8-inch cake or cast-iron pan will work just as well too.Â
- Although the recipe said it should cook in 15 minutes, mine took 25.Â
- I served the Frittata with steamed broccoli and apple cinnamon muffins that I baked ahead.Â

I am deep into floor refinishing planning and cleaning the basement and carting my kids around. Adding DIY meal kits to the fridge has been so helpful. Not having to figure out what to make for dinner means I am a much happier person. I would love to hear how the DIY meal kit concept is working in your house.

Storage containers:
We use these Sistema KLIP IT boxes (shown today) or the larger size depending on our needs. We are also big fans of 1.3 cup Snapware* for small portions. They fit nicely in the Sistema Klip-it storage boxes. I also recently added these tiny lidded glass containers (intended for baby food, but they work perfectly for spices or small portions).
*This links to the plastic version, but we prefer glass. Unfortunately, the glass containers, sold in sets of four, seem difficult to find now. This 10-piece set includes the small Snapware containers we use as well as some additional, useful sizes.

The only downside to these recipe posts is that I am so hungry after reading them. Seriously. Fritatas are one of my husband’s favorite dinners to make, so I think the apple-cinnamons can be my contribution in the future. Thanks for pulling these DIY kits together for us.
