For the first time, in what feels like weeks, the sun is shining today. I am pretending it is summer. Tomorrow, I pick up the rental sander, and Andy and I will get to work on phase I of the floor refinishing project. Be sure to follow along on Instagram. I will be posting updates in stories all weekend. Andy is going to disconnect the washer and dryer, so we will be without for about a week. In a stroke of luck, my son paid me back for something with $15 worth of quarters. If we cannot make it a week without laundry, we will have plenty of coins for a laundromat. The universe provides.
As I mentioned on Monday, I am moving the DIY Meal Kit recipes to the Friday posts from now on. If you are a weekend shopper or food prepper, this may be a better day to read new recipes. You’ll find the information at the bottom of this post.

The Podcast
Next week, I have an announcement to make about the Podcast. I have been working on a little something behind-the-scenes, and I’m excited to let the cat out of the bag finally. Speaking of the podcast, remember my guest Steve Quillian from Wood Window Makeover? He just posted this video from the Historic Homes Workshop. If you watch, you might catch a couple of glimpses of me, but the real star of the show is Evan. He is the one that captured all of the footage for the video and put it together. What talent!
Website Updates
Over the past week, I did a lot of upgrades and updates to the blog. While you may not see any difference, the site should load much faster for everyone now. Also, all of the errors should be resolved.

Zucchini Fritters
Today’s recipe reminds me of latkes and tastes like Hannukah. If you don’t celebrate Hannukah, trust me, it’s delicious.

Recipe Notes:
- I made a game-time decision to cut this recipe in half since only three of us were home, and my daughter prefers to eat only bagels and Skittles. (She cannot be counted on to eat a full portion.)
- I thought I bought zucchini at the store, but I guess I did not. I substituted frozen “zoodles” instead. It worked great, but for a full recipe, you will need two bags.
- Zucchini fritters pair well with fruit salad.
- Double the recipe if you love leftovers.

Storage containers:
We use these Sistema KLIP IT boxes (shown today) or the larger size depending on our needs. We are also big fans of 1.3 cup Snapware* for small portions. They fit nicely in the Sistema Klip-it storage boxes. I also recently added these tiny lidded glass containers (intended for baby food, but they work perfectly for spices or small portions).
*This links to the plastic version, but we prefer glass. Unfortunately, the glass containers, sold in sets of four, seem difficult to find now. This 10-piece set includes the small Snapware containers we use as well as some additional, useful sizes.

Zucchini fritters are a great recipe to hold onto for summer when you and everyone you know has too many of them. They’re good to pair with a quick salsa made from all of the tomatoes you also have for some reason 🙂
