The Friday Post: Hogwarts + Crispy Baked Tacos

Last weekend, my mom, daughter, and I spent a long weekend in Florida. Our primary purpose was to explore every inch of the Wizarding World of Harry Potter at Universal Studios, and we did. Seeing it all through my daughter’s eyes was worth every dollar we spent.

Coincidentally, or not, everything seemed to be lit perfectly for gorgeous photos.

We rode the Hogwarts castle ride three times and Gringotts once. We rode the Hogwarts Express six times. It never got old. While we did venture out to eat in San Francisco and climb a wall in New York City, we circled back for more Harry Potter. You know what? I would go back. It was that good.

  • It’s One Room Challenge time, and it looks like about 225 guest participants again this round! I always like following the featured designer projects, but the guests are still my favorite. We are all working with different budgets and skill levels, and the ingenuity born from limited resources inspires me.
  • Millie decided to shake things up around here by eating a whole lot of human vitamins and fish oil pills. Did you know there is a pet poison control hotline? I did not until yesterday. The number is 855-764-7661. We live with a food-seeking lab. How did we not know this number already? There is a $59 fee which is cheaper than a vet visit. Millie’s prognosis? A very shiny coat. She’ll be fine.
  • I’m in the market for a new credit card with excellent rewards. Do you have a favorite? The day before we left for Florida, mine was hacked to the tune of $10,000. Yes, you read that right. Of course, I am not responsible for that amount, but here’s the kicker. This is the third time this has happened to me at vacation time. I have not made it one year in the past three without a hacking incident. Something is amiss.
  • For the laundry/office, I am considering some vintage National Park poster art. I have lived most of my life in or near a national park until now. Oh, how I miss the mountains. There are a bunch (linked below), and even Cape Breton and Prince Edward Island are represented.

Crispy Baked Black Bean & Sweet Potato Tacos

Full disclosure: I did not make this recipe. However, it sounds delicious, and it’s a good fit for a DIY Meal Kit. I planned to prepare it earlier in the week, but I’m still mostly in bed recovering from the flu.

    My credit card number was just stolen as I bought a plug converter at the airport terminal as I was headed out of town. My first day in Japan I found myself credit-cardless. Luckily it was a work trip, so all hotels, etc could go on the work card. All souvenirs were bought with cash, since I had no other options.

    Let me know if you find a good option, since I’m on the lookout, too. In this case a potential backup card, since it is obvious I should have more than one.

      Oh my goodness! Thankfully, your trip to Japan was not impacted too much. Japan would be a difficult country to get around in without a credit card.

      I’m still doing some homework. The second card will be my back-up too.

    I was just reading about having a second credit card just for this type of incident. I actually had a fraudulent charge on my CC as we were driving for a weekend vacation but I didn’t want to have to cancel the card so I absorbed the $50 and monitored the card in case it continued. That was kind of dumb but it was the second or third time that year so I was sick of going through the process and I should probably get a second card as a backup too.

    Those taco/quesadillas look tasty and perfect for the rainy spring weather.

      It sounds like you’ve had a run of back luck with your credit card too. It’s such a hassle!
