Just a quick note to say that I will post this week’s meal kit recipe ideas tomorrow. My apologies for the delay. In the meantime, some of you have asked about vegetarian snacks. Here is a bonus snack recipe for knock-off LĂ„RABARs which Andy and I both love to eat.
Recipe: Homemade Larabars
Recipe notes:
- Packaged nuts are pricey, so I suggest buying them from the bulk food aisle where they are a bit cheaper.
- We roll the prepared mixture into balls instead of forming them into bars. It’s easier, and it all tastes the same in your mouth.
- Watch portion control with this snack. They are delicious, and it is easy to get carried away and eat too many.
- Homemade Larabars freeze well.
- This recipe is very forgiving, so adapt away!

As a dietitian, I consider Larabars one of the ONLY ‘real food’ bars that are easily accessible at grocery stores, etc. Other goodies include Rx bars and EPIC bars. Many other snack/energy bars are still full of extra sugar, binders, artificial flavors and sweeteners and more. I’ve made homemade Larabars before and they couldn’t be easier! Great addition to the food section of the blog, Stacy!
